    Herbivore coming to my cookout....

    Need help! A good friend of mine, who is a vegetarian, is coming to my Fourth of July party. I’m making pulled pork and 1/4 lb hotdogs. I told her I would make her whatever she wants. She said either "Grilled stuffed zucchini, or zucchini squash and cabbage mixed together". Please give me some helpful tips! I’ve never cooked this before.

    I hate zucchini after a summer of eating a lot of it in my early 20's, so I can't help with that. But check out the "Beyond Meat" website to see if there's a store near you with BBQ-like veggie proteins. Here you go: http://beyondmeat.com/store-locator

    You want them to have Beyond Burger or Beyond Sausage. The reviews are very good.

      I've had both, and both are outstanding. Bit high in the sodium department for me, but the Beyond Burger is exceptional.

      Yeah I had spicy Jackfruit and it tasted great and it really did taste and have a texture similar to pulled pork. I'm guessing you didn't have it prepared right Troutman.

      You can google the recipe and just adapt it to your grill/smoker .Another idea is cypress stuffed portabella caps. Coat a couple nice caps with olive oil. Grill it over medium heat stem side down for about five minutes. Turn it over and put some chopped garlic in it, then some halved cherry tomatoes, then some pieces of shredded mozzarella. Cook till cheese is big melted. Pour a little balsamic reduction (brown sugar and balsamic heated till thickened) over it and serve it.

        Pretty simple. Slice the zucchini lengthwise and scoop out the seeds. Fill with whatever you like (even meat) and grill. Here's a vegetarian recipe for an idea.

              Personally, I'd keep it simple. Just do a mixed veggie grill (I have a couple of these for just such occasions), serve with rice or potatoes ... and you've solved the herbivore problem and you've got some nice sides for the "normal" guests.

                Cut the zucchini in half, scoop out a bit of the inside, rub with olive oil, lightly dust with MMD, and stuff with either pulled pork or a hot dog. Then grill indirect until the zuc is done. You can then sear if desired...

                Or you could get a new friend.

                But seriously, mixed veggies tossed in teriyaki sauce and grilled are very tasty.

                  Just do the stuffed zucchini she asked for. It’s easy. Another super easy thing is veggie kabobs brushed with a thick teriyaki sauce from the store. I wouldn’t bother with a dedicated grill myself, just clean off a corner of the grate and don’t put the meat on it.
