    cold smoked apples

    I am wondering if anyone has ever cold smoked apples and if so could you please tell me how you did it?

    *Meathead strongly discourages cold smoking. And really, we aren't even supposed to suggest ways of doing it here in the Pit, because of the dangers involved in cold smoking meats. But since this is fruit I am not sure that applies here. So hopefully I don't get in trouble here.

    Never have but I would do it on a gasser indirect to keep the temp down. I would then use a wood-chip foil packet for the smoke. Put the foil packet over the flame on the grate. I would doubt you would want to go over 80 F or 90 F in the cooking chamber. That is the only reason I would use a gasser and foil packets. None of my smokers can run that low. I suppose my Kamado could get that low but I have never ran it so low. As for the prep work, I am not sure how to prep them. But this the setup I would use for the smoking portion.

      Heck, my smoker runs 120 - 130 in the cook chamber just sitting in the sun in the summer!

    Interesting, never really heard of smoked apples. Since the cool season is approaching (of course, this depends where you live) that makes cold smoking easier. I've been told by a good friend of mine when cold smoking cheese to go at 40 degrees- basically get smoke rolling through the cooking chamber w/o any heat, as if it's in a smoky fridge. Obviously cheese is susceptible to melting and apples aren't, but I suppose as low as possible is the best bet. Some folks will use A-Maze-N Tubes with sawdust or pellets to get smoke but not heat. I've also been told to let cold smoked items sit for a good while before eating, as they can taste bitter and unpleasant at first.

          No Dice! @#$%! I have been doing computer graphics, and making websites for 20+. Took awhile to figger out where the issue was.
