This is a standard cole slaw. It is somewhat modified from the original source, which is the Jamison's "Smoke and Spice" cook book. I have deleted the garlic cloves they recommend. While I love garlic, one of the foods of the gods, it strikes me to be an odd slaw ingredient. Use your preferred cabbage/veggie mixture with this dressing. I like a mixture of green and red cabbage, with red bell pepper, red onion, and grated carrots. I think the key is to slice each veggie very thinly and then cross-cut the slices into lengths of about an inch.
Ingredients
1 c half and half
1/2 c sugar
3 tbsp mayo
6 tbsp vinegar (I vary between cider and plain old white)
1 tsp salt
Black pepper--freshly ground, to taste
Directions
Mix all dressing ingredients in a bowl until well blended, a whisk should work just fine. Dress the veggies until nicely moistened but not too runny. Toss to mix well. Serve topped with some more black pepper. Let sit a while and ENJOY!
