    How should I preserve jalapeños?

    Hello friends,

    I picked up a jalapeño plant from Lowes. It was a small plant in a pot. It was labeled "pot-o-peno". The label said there was no need to transplant and suggested leaving it the container it was in. I did transplant it to a larger pot. I fed and watered it regularly and it grew larger than the label said it would.

    Now it's full of fruit. It seems like all of it fruit came ripe at the same time. I love jalapeños, fresh, in salsa, roasted, smoked, etc.. I do not want these to go to waste. How do you recommend preserving them for future use?

    I just snip and if it is right after a rain, into a ziplock then into the freezer. Otherwise I might rinse n pat dry. They keep very well.
    I cut them up for corn muffins. I have some I have had for at least a year.
    I am getting ready to try JalaApple pie. When we went to Tabasco, in Lafayette, we had Tabasco ice cream. Incredible! Not hot just very flavorful.
    A recent post about Hatch chilis, suggested the pie mix. Poblanos, Jalas, Serranos. I have a whole new outlook for using Chili.

      Smoke 'em and make your own chipotle also. As Bruce said you can freeze them or you can dehydrate them.

        I pickle a lot of mine.
        I make batches of Cowboy Candy that I use on sandwiches, omelets, salads...
        In the past, I've strung a ristra and let them dry, and then grind into powder, or just use them

          I second this. My parents have been giving me peppers this summer and that is what I did with all of them.

        I thought they got mushy if they were frozen whole. I haven’t tried that, though.
        have you kept that plant indoors or out? That potted plant sounds like it was a great investment!

          My grandmother used to freeze green peppers, and they were mushy but fine for cooking. I'd imagine most peppers would be similar.

          They’re outside. I live in coastal SoCal so we have pretty good growing conditions.A good investment indeed. It was the last one on the shelf. The label said $19.99. The plant was bent over and ready to come out of the soil. I asked for a discount. Got it for $10. Paid for itself for sure.

          They gonna be mushy after you cook them or blend them into a salsa anyway. Unless you plan to dice them and leave raw it works out fine.

        I’m with Uncle Bob smoke them. I just finished a batch for the daughter. If you’ll cut the top off it lets the moisture out quicker. I did these in a kamado with a Smobot. I ran them at 180 F with Apple wood for smoke for about 7 hours. They are ready for her to make adobo sauce. Which as for as I can tell is just a good mole sauce.

                I grill them then pack them in 4-5 pepper packs. Then put those in a freezer ziplock and freeze. Then I can take them out over the winter and use them accordingly.

                  You can also just dehydrated. Sliced, halved or ringed.
