    Salsa Borracha: smoked trisket?

    Hello fellow pit masters,

    I’m smoking 4 Wagyu tri-tips like brisket for guests. I’m also serving frijoles de la olla.

    I’m considering investing flavorful sauces that might elevate the meat, optional and served on the side of course. I’m not a fan of chumicuri. BBQ sauce might cover up the smoky beefy flavor.

    Remembering how much we enjoyed salsa matcha, but wanting something with more heat, salsa borracha came to mind. What do you think, would it pair well with the smoked trisket?

        I'm not a fan of chili de arbor. To me they are all fire and no real flavor. I want it to be spicy, but not so much I'll be the only one enjoying it.

        I poured over many recipes and videos. Here is the recipe I landed on, with personal adjustment for my personal taste.

        SALSA BORRACHA
        Ingredients
        • 2 ripe Roma tomatoes
        • 3 tomatillos – husk removed and washed
        • 1/3 white onion to roast, ¼ to dice
        • 4 serrano chilis – stems, seeds and veins removed
        • 2 dried poblano chilis, a.k.a., ancho – stems, seeds and veins removed
        • 1 Maderin (tangerine) - juiced
        • Cilantro – finely chopped
        • 3 cloves garlic – peeled and chopped
        • Course sea salt – or smoked salt
        • Two pinches toasted cumino
        • Small amount of Cotija crumbling cheese
        • A shot of smokey Mezcal
        Instructions
        • Toast the Ancho chilis till aromatic, no more than 1 minuet per side
        • Cover with boiling water and let sit for 20 mins
        • Drain and discard soaking water
        Roast all the vegetables to char the skin:
        • 2 Roma tomatoes
        • 3 tomatillos
        • 3 cloves garlic
        • 1/3 white onion
        In molcajete – crush in order:
        • Garlic, two big pinches sea or smoked salt, toasted cumin
        • Dried ancho chilis
        • 4 serrano chilis
        • 1/3 white onion
        • 2 tomatoes
        • 3 tomatillos
        • Mandarin juice
        • A shot of smokey Mezcal
        Top with
        • Chopped cilantro
        • Diced white onion
        • Crumbled cotija

          I saw that video on Instagram.That’s what got me interested in salsa borracha.
