      Roasted the case of milds this evening. I should have waited another hour, it was still hot! It took about 5 minutes per batch, I split the peppers into 3 batches.


      Bet you didn't know that PK Grills has a chile roaster accessory? I wanted the mesquite smoke flavor so I set my Santa Barbara Chili Roaster over the PK with some mesquite chunks. I could have roasted with just the coals but it went much faster with the propane hooked up. Gotta be careful, one time it tried to fall off the PK.

      58limited those look great. I'd love to do something like that, but holy cripes peeling and deseeding that many just takes forever.

        If you roast them just right and let them steam for a few hours in a garbage bag, they will peel really easy. And the seeds, I just get what I can when I pull the stem. You can always get the rest of the seeds when you use a bag out of the freezer.

        When I was younger, we would actually have peel parties - probably 4-5 families would get together with food and such, and sit at tables and peel away.

      Our local Kroger sales flyer showed Hatch chiles being there on Wednesday. I took an early lunch break to run some errands, including chasing after Hatch chiles. Unfortunately, they were nowhere to be found. I went to the customer service desk, where they paged the produce manager, and he told me that while he has received the display material to sell the Hatch chile's, they have yet to show up on a truck.

      Needless to say I was bummed! They didn't even have the advertised Hatch Johnsonville brats!

      I'll try again on Saturday...

      I am hoping for 5 pounds or maybe 5 mild and 5 hot. Last year they had bins of them labeled mild and hot. Not sure if they really were, but I bagged them in the deep freezer that way after roasting and peeling.

        Don't get your hopes up on the Hatch Johsonville brats - they're about as spectacular as all the other Johnsonville brats... which is to say, not much. Jus' sayin'.

      I picked up two pounds tonight! Hatch chile burgers for tomorrow! (Haven't decided whether to do smash burgers or 1/4-ers.)

      I had the same experience at Harris Teeter on July 30. Jumped up when I saw the ad, went to the store, no Hatch Chiles. Waaah!

      I had already bought some fresh-ground burger meat from the specialty butcher down the street, planning for Hatch burgers. Ended up having plain smashburgers instead. So good but still so sad.

        I went again on Friday and still nothing. At this point I guess I'll try next Wednesday.

        I think they jumped the gun on the ad, as they USUALLY are not here until mid August, I think.

      I went to HEB on Wednesday for the hot Hatch Chilies and they were out of them so I ordered a case. The produce manager said they weren't even getting all that they were allotted so I wonder if there's a shortage or is it just so early in the season there's not enough to go around yet.

      Now that my air conditioner is out I get to pick up the hot Hatch case today and roast them and peel them - oh joy!

          I picked up the case of hot Hatch chilies at HEB today - $1.27/lb. The produce manager commented that while he was able to get this case for me HEB's warehouse did not send his full allotment so I guess there is a bit of a shortage. I shouldn't need anymore this year other than the red Hatch for my hot sauce - two cases ordered and they should arrive mid-September to early October.

          I did two batches of what is in the first photo. 58limited has the right idea with the tumbler thing. The really curved chiles....it is hard to get a char on all sides as they won't stand up straight and you have to balance them against other chiles.

            That is why I bought the chile roaster. I burned myself a lot by trying to position the curved peppers to roast the hard to get to sides. Plus the chile roaster is much much faster than using the grill.

          I'd love to have a tumbler...


          Anyone used a Vortex for doing chiles? Like I wondered if the convective heat from above, with chiles all around the periphery, would be a more... efficient use of time?

          I don't have a TON this year, I picked up about 4lbs of 'hot' Hatch chiles from one grocery store, went to 2 others which had none, and then finally WalMart, which had ~2lb bags of 'hot' and 'medium' - no 'mild', which I wanted for my wife, and here's the nice part...

          WalMart had the 'hot' and 'medium' in bags called Hatch - then next to them the 'mild' ones were Anaheims. Now, I know I've seen Hatch chiles labeled as 'mild' before, but it seems like maybe they're just being lazy, or trying to convince us they're the same thing or is there a lack of these?

          I remember 3-4y ago, the store I usually have gotten them in the past had a giant display and I ended up with around 20lbs worth. Lotsa work, that was, but it was fun, and worth it. But now, I'm lucky if I can find just a plain slot in the veggie section next to the bell peppers and poblanos, a few Hatch chiles, and the last two years, it was pretty slim and only the 'hot' ones.

          What gives?


          And yeah, I'm gonna sear mine off tonight and/or tomorrow prolly. I gotta label the mediums so my wife doesn't complain. She can take hot stuff, she just doesn't prefer it - says it drowns out other flavors. Although, to be fair, most 'hot' Hatch varieties I don't think are super hot, right? Like... not like jalapeno, serrano, habanero hot? I mean, may some of them are approaching jalapeno levels, but not that much, that I've seen.

            I can tell you from experience that the Lumbre variety of Hatch chile meets or exceeds serrano heat levels, at least the batch I got two years ago was that hot.

          This thread is making me feel really lazy now. After years of buy a box of fresh chiles and then roasting and processing them just to then vacuum pack the results I bought 2 5lb boxes of frozen chopped roasted hatch chiles; one mild and one medium. I did repackage each box into smaller servings sizes for easy use. At least to me they taste just as good as my home processed ones, but I do miss the ritual and smell of roasting the chiles over a fire.

            5lbs of already roasted, peeled and chopped? Yeah man, that sounds like a deal if they're just as good! lol

            I will say I do like having some whole ones, though - I like a whole roasted chile then seared on the Blackstone on top of my smashburgers sometimes - also with a fried egg! lol Soooo good... where do/did you get your pre-roasted ones? 5lbs roasted, peeled and chopped is a LOT of chiles.

          I used a couple of my 'medium' heat Hatch chiles last night in a spontaneous creation - I blackened them off on one of the Webers (another was doing al pastor with the Vortex), put them in a Ziploc and let them sit. Man, these definitely peel easier than poblanos do for sure!

          Anyways, peeled and seeded, then cut in chunks and mixed in with some corn I also roasted and slightly blackened and cut off the cob. Added juice of one lime and some cilantro, S&P. Came out pretty darn good for just a spontaneous, "Hey, why don't I try this?" kinda thing.

            All you damn enablers done pulled me into the hatch chili craze! 😵‍💫 While at HEB today I figured I’d take a look and see what they had. They had fresh hatch chilis along with some small containers of already roasted and chopped peppers in a refrigerated bin. I thought these would be perfect for me as I didn’t want to go through the roasting and peeling process just for one person. They had a sell by date of today and wasn’t sure how much longer they’d be good for. There happened to be 3 manager looking types nearby so I went up to em and asked if they knew how long these might be good for. After asking, 2 of em happily walked over to the peppers with me and asked me which ones I was interested in. I told em the spicy, and he picked one up and looked at the sell by date [it was today] and said if I keep em refrigerated they’d be good for maybe 2-3 more days. After a little more chit chat he said hey, “let me give you one at no charge and see how you like em!” I said thanks a lot man, I appreciate that! He then filled out a little card which I later gave to the cashier for the freebie. It was only $2.65 but I thought it was a nice gesture on his part, just another reason for me to love HEB!

            One of the best burgers I’ve had was a hatch chili burger from Buffalo Wild Wings, believe it or not, so I think I’ll do some hatch chili burgers soon. Question for you guys, can I freeze these refrigerated diced peppers without affecting the flavor and texture too much?

              Vacuum seal and freeze them, that is what I do with all of the ones I buy, other than the ones that go into the hot sauce.

            realdocBBQ They came in a plastic deli style container and it weighed .89 lb, @$2.98 per lb. So, I’m assuming it was a 16 oz container.

              Another reason I need to either move HEB HERE or more ME... THERE.

              Well I was wrong in my earlier description of these peppers, I thought they were already peeled and chopped, they weren’t. They were already roasted and stored cold in a liquid just like the label said. Being a man, I didn’t really pay much attention to the label before I posted earlier. 🥸 They were mostly whole peppers, very soft, but not peeled or chopped. I just had to spend about 20 minutes peeling them myself…..oh the horror! 😳

              Oh wow....at first glance in the photo above, they certainly look peeled! But I can see, if I look really closely, the skins are still hanging on.
