I watched it. Nice. My choice matches theirs: certified San Marzano tomatoes.
Somewhere I read that Bianco Dinapoli whole peeled tomatoes out of California are equivalent. I picked some cans up at Target but have not tried them. Chris Bianco is the Phoenix pizza maestro. Dinapoli is the grower.

Back when Bianco first got nationwide attention for his pizzas (thanks to Jeffrey Steingarten), we ate in his Phx joint a few times--very, very good and not at all like the typical American--Domino's/Little Caesar's/Pizza Hut--pie; 'twas an eye opener for me.

I always found it interesting that they recommend two different brands for whole vs crushed. For whole tomatoes they like the Cento branded San Marzano, but for crushed they pivot over to a domestic brand: San Merican.
