Eggplant is great ont he grill. Slice in about 1/2 inch slices, brush with olive oil, salt, pepper. Grill for a few minutes per side, donโt let it burn. Finish with some fresh herbs like basil, parsley, etc., or a simple vinaigrette.
This, with the additional step of dry brining for an hour or so before grilling and blotting up some of the moisture with paper towels. The eggplant isn't so mushy then. I learned this from my Italian family. I also like to sprinkle with a little shredded parm and oregano before taking them off.
In my world there is just one way to eat eggplant. Whole slice, salted to remove moisture, dried off, coated in a panko/parmesan mix and then fried. Use to be my lunch everyday when I was sailing. No need to change out of your coveralls and shower before eating in the wardroom. Just stroll into the galley and the cook would hand you 3 or 4 slices wrapped in napkins and a cup of marinara for dipping and the bonus was that the fantail makes a great scenic lunch setting.

I find it quest to find any recipe that gives it any taste let alone bein good. Worse than canned peas. Everbody keeps tryin to make somethin of it. In all my years, Not!!!

I don't have a recipe, but the only eggplant I liked was at a restaurant. It was an Italian inspired dish like maybe eggplant lasagne or something. There was tomato sauce and cheese and it was really good.
