    Half that avocado (vacuum seal the other half) got added to 1/8 leftover onion, a bit of tomato, a little garlic and cilantro, and some lime juice; along with a bacon, an egg, and some chopped leftover French fries crisped up in the air fryer

    to become today’s trio of breakfast tacos. I was doing these con copia (two tacos, two taco shells) but three smaller tacos is a better balance of tortilla to filling, and is less food and makes my tortillas last longer. Also appearing: cheese, green sriracha, and Texas Dave’s.

    This is a lot less food than it looks like. That’s 3 small tortillas, one egg, half an avocado, one strip of bacon, a slice of tomato, about 5 crinkle cut Ore-Ida fries, and some cheese. It’s going to hold me 10-11 hours or so.

    I need more recipes with avocados in them. I cut one up everyday for lunch, whether it goes into a salad or I eat it with whole milk Greek Yogurt, or cottage cheese, or mixed with scrambled eggs, I think I've eaten a boatload at this point.

    I season it with a variety of things, but after 3 years of doing that, I'm recycling those same flavor profiles over and over again and it's getting a little boring.

      I like Mexican hot sauce drizzled over the avocado. I just eat it with a spoon.

      It’s not all that different from cottage cheese or yogurt, but last night I mixed the other half of this avocado with some ricotta, salt, and pepper. It was really good.
