My father in law loves pickled veggies. I am thinking about getting him a nice pickling kit to start that process. He already has canning utensils and jars, but what else would he need to get started in pickling veggies? Does he only need pickling spices? Are there special jars he needs?

I can and pickle extensively. Quick and easy equals a 2 day refrigerator mix. Long term storage equals canning-a water bath canner is a must. There are fermenting kits as well that essentially just rely on salt, 1-2 gallon jars and air locks. I make my sauerkraut that way as well as chow chow and occasionally pickles. I suggest googling the canning granny and visiting the ball site
