Mosca if you go back for more, grab some Lion's Mane. Diced them up and saute hot and fast until crispy. They are like bacon bits!!

Thanks! My co-op has these all the time (a guy who grows mushrooms and microgreens keeps it supplied) but I never got around to trying them. I'll get some next time. Now, what about those giant King oysters?

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
Sautéing these guys up… they reduce like spinach! Instead of freezing them, I’m going to add some garlic, and some summer squash. This will be the side dish for whatever I decide to make for dinner (probably chicken).

Something crossed my mind last night, another good use for mushrooms (esp leftover ones). Duxelles. I used to do this (when I cooked more, and had a more organized life
) with the trimmings, stems and leftovers from mushrooms. These freeze very easily, also, and I've always frozen in half cup containers. I think I first made from Julia Child's recipe in one of my cookbooks, but it's pretty easy to wing after once with recipe. This is a lot like the one I've used, realizing I haven't had a stash of duxelles in my freezer for a while now. Adding to my co-op shopping list for later today.
