    Reverse (color) pico de gallo!

    Had some yellow tomatoes and some red jalapeños. Decided to see what it looked like.

    It’s got that mango lookin’ thing going on, but it’s definitely pico de gallo!

    Many people say it’s best immediately, but I think it’s better after a few hours. This is for tomorrow. I probably won’t use it all tomorrow, but it will definitely be gone by Saturday. It’s all low-cal, it’s just vegetables! I eat it with a freakin’ spoon, I tell ya. Avoids the carb hit from the chips.

      Looks like I wont shy away from different color veggies anymore. And I agree…it’s better after sitting for a few hours!

        I’m with you, let mine sit in the fridge overnight , that lets the lime juice do its magic. For the second day grab an avocado and use it to make guacamole. That’s another great low carb treat.

          I always put a tablespoon or two of pico into mashed avocado.
