    Cole Slaw w/ blue crumbles & crayzins

    Hey folks,

    I’m hosting the bros for a Friday afternoon BBQ. One it our crew is a vegetarian because of severe gout so I’m adding some non meat items. I smoked a couple butts, making bbq beans today, grilling some jerk marinated eggplant, grilled corn w/ chipotle lime butter, grilled halloumi cheese & heirloom tomatoes.

    I will make the obligatory coke slaw but feel compelled to kick it up a little. I going to add dried cranberries and blue cheese crumbles.

    Anyone here ever do anything like this? Thoughts, results, suggestions?

      I love bleu cheese in anything, so I would probably devour the cole slaw.

        Haven't tried cole slaw with cranberries, but love it with blue cheese. This is the recipe I follow, but a little will go along way as it is really rich:

        INGREDIENTS
        8 bacon slices, chopped (You will want to leave those out for your vegetarian friend)
        3/4 cup mayonnaise
        3/4 cup buttermilk
        2 tablespoons red wine vinegar
        1 tablespoon apple cider vinegar
        1 tablespoon honey
        16 ounces purchased tri-colored coleslaw mix
        1 cup crumbled blue cheese
        PREPARATION
        Cook bacon in large skillet until crisp. Using slotted spoon, transfer bacon to paper towels. Whisk mayonnaise, vinegar, and honey, cheese, bacon, and then stir in coleslaw mix. Season with salt and pepper and toss to coat. Make at least 2 hours ahead, cover, and chill.

        Costco sells a big ol bag of Craisins. I use them all of the time. Plump n juicy.

          I have had a “blue cheese cole slaw” in a sandwich. It was quite good.

          Thanks tstalafuse. Definitely giving that a try!

            A couple of more suggestion are adding golden raisins, and also try adding diced, sweet apple like Envy or Honeycrisp (or whatever sweet apple you prefer). They both add a sweet element that goes well with slaw dressings that are tart.

              I always put bleu cheese in my slaw, also a dollop of horse radish.
              1 Cup 1/2 and 1/2, 1/3 cup sugar, 6 Tbls. cider vinegar 2 cloves minced garlic.
              I use red and green cabbage and grated carrot.
              (don't go too heavy on the bleu)

                Another addition to coleslaw that takes it to the next level is a sprinkling of sesame seed kernels when serving. If you add them to the mix they will lose their crunch.
