In the never ending quest to find something new to go with dinner I’ve been grilling veggies. Understand I’m not going to the store and picking out a few of these and one of those. I’m going to the frozen food section of the store and buying different bags of stir fry veggies. There are sugar snap pea versions, onion and pepper ones, and so on. I pull one from the freezer about noon when we want them for dinner and let it thaw all afternoon. They don’t work well for me when frozen! Anyway I bought one of the carbon steel pans with about 1/2 inch holes in it to use for this. If I spray the pan with spray avocado oil and lightly spray the veggies with the same spray they grill up beautifully over a very hot bed of coals. You can put just a bit of char on them and still have some firmness left if you get your fire hot enough. I give them a light dusting with seasoned salt as I take them off the grill. They’re simple and good. When you’re just cooking for two simple is big on the list.

I have stainless grill pans that I use for the same purpose.
Frozen mixed veggies is not something I've considered because I don't generally use frozen or canned veggies.
I may have to consider trying that.

Zucchini and yeller crook neck squash are great with some veg magic (Paul prudenhomes brand) and a touch of bacon grease) right on the grates. Cauliflower with curry powder the same (add some salt). We enjoy corn, grilled green beans (pm me for that recipe, I think it's right up your alley bud), sprouts, he'll Eben grilled Romain hearts for salad. Also shishito peppers with sesame oil, salt and pepper are great too!

I usually stir fry the veggies you mentioned. But, as Jerod Broussard wrote grilled cauliflower, corn, and carrots are yum. In fact after having grilled corn on the cob you may never eat boiled corn again. Grilled summer squash and eggplant are good, too. Not to mention grilled sweet potatoes with chimichurri sauce and grilled winter squash. Grilled steak potato fries are better than regular fries, too! No, I am not a vegetarian. LOL

I wanted zucchini yesterday and strolled over to the produce section at Publix and they were over a dollar each for very small zucchini. I'm going to grow some.

Zucchini, Summer Yellow Squash, Cauliflower, Brussels Sprouts, Asparagus, Corn on the Cob and Butternut Squash have all been cooked over coals by me.
The three squashes I like just to brush them with olive oil and then salt and pepper.
Asparagus is great wrapped in bacon.
The Brussels Sprouts I’ll mist with oil and spritz with apple cider vinegar as I grill them.
I’ve from time to time dusted my Cauliflower with BBQ rub as it’s cooking over the coals.
And the corn is great brushed with butter, mayo or actually anything. Tajin is a great sprinkle on Corn cooked on the grill.
