    Krout Reccomendations

    Looking for some recommendations on widely available sour krout brands. I love the stuff, but most of what I get in a can or jar seems to not be as good as what it could be. Anyone have a favorite non artisinal, non boutique recommendation?

    I don’t know if this applied, but somewhere think I read that you should drain (I am sure about) and rinse (not sure). Also contrary to what I always thought there is no vinegar. The sauer comes from the fermentation process.

      Yea, soggy bread isn't optimal for a good sandwich. I enjoy it as a side say with hotdogs. Maybe I'll give it a shot not draining.

    For supermarket everywhere kraut we like Libby’s. It is also a ATK taste test recommendation.

      It is available at just about every grocery store I've looked for it at in the midwest.

    No desire to make your own? I will do that someday. I read that lactobacillus fermentation is pretty easy.
    Opens the door to homemade KimChee, Kraut, Hot Pepper sauce with depths.

    I’m pretty sure there are a few folks here that ferment food on a regular basis, in jars.

    for now I use boars head.

      oh man...it is ridiculously easy and has much more health benefits than anything store bought (btw, any "kraut" that is on the shelf, room temp, is pasteurized...it kills all the good bactiera)
      If you want to do your own, there is a small upfront investment in equipment, but that is it.
      It is cheaper too than anything store bought and so good for your gut.
      Here is a setup I did last year:


      2 krauts, 1 pepper, 2 carrot (all fermented) and kombucha

      I do a lot of fermentation when it warms up as it speeds up the fermentation process. I stock up for the winter starting in September/October.

    Our market carries Boars Head brand - comes in a clear pouch and it's near the deli. It's our favorite

    Aldi has a German brand which is okay for me, but I am not a big kraut person.

      Cleveland Kraut appears to be fairly widely available (I've gotten it in Whole Foods everywhere and Publix in FL). They have a classic with caraway seeds, a roasted garlic, and a beet slaw. Look for it in the refrigerated section, often near the deli or vegetarian products. It's all I buy now.

      Boar’s Head makes some decent stuff, it comes in a bag in the deli section where I get it.

        We like the Bubbies brand. A little on the pricey side but it tastes pretty close to home fermented to me.

          I second the recommendation to make your own. I don't like store bought kraut but the stuff I make is good. I was taught by a Swiss grad student who was in my home brew club in college.
