    New Mexico Chile - Red or Green??????

    Or Christmas

    yep - my turn to stock up on chile. Coming from Wagner’s Farm out of Socorro, New Mexico - this is one of my favorite farms to get chile. They pick and deliver to one of their store fronts about 5 miles from the house. Chile and so much more.

    But for me, went with two baskets, one of each. NM Big Jim Green Chile - Medium and medium red chile. And this is picked as of today and just off the truck as they are getting ready for Saturday rush.

    As I’m standing there waiting for the roast, the aroma just takes me to my happy place, smelling that wonderful chile roast! It’s also a sign of fall in New Mexico for the locals. It was quiet this afternoon, however tomorrow will be hopping and these six roasters will be going non-stop!

    The green is roasting in the first roaster above.

    And as the red gets closer to finishing, the guy tells me it’s going to be a picture worthy batch and invites me over to check it out. I told him about Amazing Ribs and the love for chile - he said well, I better make sure it’s one of the best roasts then! I think he just about it got it perfect!

    dinner tonight - a few warmed corn tortillas with a chopped chiles and garlic…..I can’t wait!

        So cool seeing regional seasonal customs. For us it is apple picking and cider donuts.

          It is! Last week in Kauai - same thing, just fruit everywhere you look! And you saying apples reminds me of being a kid and going to Dixon Apple Farm for champagne apples. Man those things were amazing…sadly the farm burned in a fire years back.

          Can’t wait to see some of the apples and donuts from you!

        I’m glad to see you touting chiles from somewhere besides Hatch, not that there’s anything wrong with Hatch chiles. Socorro holds a fond spot in my memory. I spent a few weeks testing “stuff” there at EMRTC, plus visiting the VLA (and Pie Town!) and Trinity site. Oh, and the Owl and the Buckhorn tavern for green chile burgers. Yum!

          yes to everything you say! And for me, I’ve become fond of the chile from Socorro/Lemitar. The past 4-5 years, we have picked up our chile from Wagner’s and have really enjoyed it. And we like that it’s local, in a way

            And we have finished our chile. Just my wife and I and it took about 2 hours to peel and bag. The lot turned out 38 sandwich zipper top bags. All stacked in the freezer now for some green chile stew, enchiladas, chile rellenos, and whatever else I come up with - like I did tonight. Took out some arepas and chopped up a few of red chiles and warmed in a skillet with garlic and salt.

              Willy - no, I am not. I have not really explored Lemitar, besides driving through or near to go to San Lorenzo Canyon. How long ago was it that it was last open?

              25 years ago…nope..I’ve been driving through there since I was a kid to get to the lake, so 46 years now. But never new of that restaurant. And not that I know of, no relatives in AZ. If you are familiar with ABQ, and were around here at times 30-35 years ago, my family did run a New Mexican restaurant on 4th and Montano called Barela’s New Mexican Food - my grandfather took it over from his sister and ran it for 4-5 years. One reason for my love of cooking and chile.

            They roast them locally here as well. Oh that smell at Hatch chile season.

                  I put up some chiles a couple weeks ago that were labeled 'Hatch' at my local grocery store. I oughtta go back and see if they've gotten any new batches in and get some more.... hrrmmmm...

                    Yummy, on the Christmas colored chiles. I can almost smell those freshly roasted chiles in your photo.That's some good eating right there!
