    Pickling error - left fridge pickles out for a few days

    Leaving town last thursday, did a last minute run through the garden gathering Okra and Gherkins. Whipped up a quick brine - almost 50/50 vinegar to water and two TBS salt. No time to do a hot water bath, planned to put them in the fridge but got busy and forgot.

    They look OK as of Monday afternoon, but are they safe?

    With all the salt and vinegar, I would think they would be ok.
    Sometimes it is best to err on the side of safety.

      Are they in canning jars?
      was the brine boiling hot when you added it to the jars?
      is the pressure point on the jar lid “popped”?

      When I do peppers in a brine like that, I never water bath them.
      as long as the lids vacuum seal during the cooling process, I store them on the shelf with no worry.

        If they were bad you would know. Slimy, or bad smell. Put in fridge then enjoy as planned. That's enough vinegar and salt.to.kill any bad stuff.
        we usually do crock pickles this time of year. Water, salt, cukes, carrots, garlic, dill. Into a ceramic crock for a week or two.

          Thanks for all the input. The Okra passed the sniff test but not the cucumbers so I tossed them all.
