    Yep! If have any number of cucumber vines you either have to work hard at giving them away or resort to canning!

      I do both dill and B&B and have affection for both. On the far end is Mexican Corn Relish, which is pretty special.

      Not canning related but my favorite two things to do with garden cucumbers are:

      1. Slice the cucumbers thin, slice a candy onion thin and mix both in sour cream and let sit for three to 4 hours before you eat it.

      2. Cube up the cucumbers and add it to a can of drained and rinsed chick peas. Mix in home made Italian dressing and freshly grated Parmesan cheese.

      Oh I’d be all on that! Been years since I’ve made whole pickles.

      I’d also make cucumber and potato salad (German dish)!

          It is pickle season here is southwest VA too. Vegetables are really starting to come in and we are canning, freezing and dehydrating like crazy!
