If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I think in a stir fry just use ginger and your other spices and omit onion and garlic. It will be fine. Use pepper, salt, ginger, fish sauce, soy sauce, toasted sesame oil and other sources of flavor.
I know you said they could ‘tolerate’ shallots but they may be saying that to appease you. Personally I would just stay way from them all for this cook.
EDIT: I am assuming fish sauce and soy sauce and such don't have garlic or ginger in them! I've not looked.... that would suck...
