Garlic scapes are a stem from a hardneck variety of garlic. They produce a false flower that forms small, as in teeny tiny, garlic cloves. Garlic farmers remove them as they take energy from bulb production. If you have a garlic farm nearby that is growing hardnecks, stop by and see if you can get some scapes this June. But if you are curious, and some spare change is burning a hole in your wallet, I came across a site that ships scapes. So what do you do with scapes?
First, remove the 'flower'.
One of our favourite things was to sauté them in butter after cutting them into three or four inch lengths. Salt and pepper and serve. This was before we got an air fryer, I imagine it would work as well.
Second is making pesto. Run the scapes (remember, remove the 'flower') through a blender with basil and pine nuts.
Tops on my list was to run them through the food processor to make a spread for burgers and sandwiches. To give your guacamole a garlic kick, blend it in with your guacamole.
Another popular thing, which I didn't do as it wasn't my thing, is to pickle them. I preferred pickled garlic, not scapes.
Anyway, if you like garlic, I hope you can find some scapes and give them a try.
