Have a ton of long hots coming out of the garden. Have eaten a bunch, and given away even more. Getting burnt out...no pun intended.
looking for ideas on long term storage.
I could slice and pickle like I do my jalapenos, but wondering if others might have different ideas
I've done that in the past with cayenne peppers. Never thought to do it with other types

No, dehydrating green peppers do not make them turn red. For a green pepper to turn red, it needs to ripen on the plant until it does so. Note that not all green peppers will ripen to a red colour.

Last year I had lots of reapers, habaneros, cayennes, etc. All I did with the extras was freeze them. Didn’t even seal them, just put them in a ziplock. You can’t use them for stuffing, etc, but they are fine for anything stewed or sautéed.
I had a big turnout of hot peppers a couple years back before I stopped growing them. My garden space is not that big and they were spicing up my tomatoes so all tomatoes and no peppers now. What I did was dehydrate them in a food dehydrator then into a food processor grinding into flakes and a powder. Both, jalapeno flakes and powder came out fantastic.
Fry with olive oil and garlic and add to sandwiches
stuff with sausage and roast
i also use long hot peppers in a Chinese cucumber salad.
Was also just reading a recipe on Woks of Life for a dim sum recipe for Chinese stuffed peppers which is one of my favorite dim sum dishes (but I’ve never made it myself). The pepper they use seems similar a long hot to my taste
