      A couple of years ago I ordered some from the Hatch Chile Store. I skipped it last year because I was distracted, but I looked at them again this year. Shipping is pretty but I think I am going to suck it up and order some anyway. They are just so dang good.

      OK this settles it. I gotta search the grocery stores around here for these hatch chili peppers.

        I’m surprised they aren’t more common everywhere. Up here my grocery store gets cases from The Hatch Chile Store. They’re pretty much always on the shelf from mid July through August and they often roast chiles out front on the weekends.

            klflowers I had some in the cupboard but you could always use sugar or honey.

          I am so excited that Hatch Season is here. I will be driving to Albuquerque next week to grab a few bushels for the freezer. My wife is from New Mexico and we only do Hatch in our house. I have a friend with a roaster who will help me out. We will clean them post roast and then flatten them, put them in ziplocs, lay them on a tray and freeze them for this winter.

            New Mexicans are definitely quite snobbish about their 'Hatch' chiles. They're good stuff, I'll grant - but are they truly head and shoulders above most other varieties? I dunno, this is my first time buying and roasting my own, so I'll be able to render a better opinion in a few months after I've used them up.

              I am from Wisconsin and now live in Colorado. I really do not think that the Colorado Chile's are good at all. There is definitely something about the soil composition that makes the New Mexico Chile better in my opinion.

              I'm from California where we have the Anaheim Chilis that look like Hatch Chili peppers but true Hatch Chili peppers have a better taste and heat in my opinion. They are addictive for sure and anyone trying them for the first time will not be disappointed.

            I roasted mine and just threw them in a plastic bag, let them cool, then froze the whole shebang. I didn't peel them, something I read somewhere online said it was actually better to leave the peels if you were going to freeze them.


            Anyone have any comments on the peel/freeze or freeze/thaw/peel issue?

              It just seems easier to me to do all the work at the same time.

            They’re in our local Wegman’s. $1.99/lb. Just roasted a few pounds.

              2023 Hatch Green Chile Season

              Picked up a 25# case of fresh medium heat level Young Guns Hatch Green Chiles on Saturday from our local Sprouts Market. According the carton these peppers were harvested nine days ago. Love the aroma of roasting these peppers and have plans to enjoy them till next season.

                SheilaAnn- Yes, Sprouts on Woodruff. Had to call and talk to the produce manager cause they are not roasting peppers in the parking lot this year so they don't have as many 25# cases available for sale.

              For those that roast their own chiles: do you remove the skin them before freezing, or skin them as you use pull them from the freezer? Roasting a big batch of chiles is OK with me, but removing that many skins all at once sounds tedious.

                I have done them both ways. If you are going to do a big batch, just let them sit in a plastic bag of some sort for a few hours to steam. When I was a kid, we would have roasting parties and everyone had a trash bag full of chile to peel. Now if we do that, it’s just my wife and I for the 10lbs or so that we get each year.

                That said, the last few years we have just frozen with the skin on.

                I find it easier to peel 'em after they've been frozen as the skins tend to come off clean instead of falling apart like a poblano.

              I've done both ways. Mainly depends on how much time I have when roasting. This time i peeled.

                My wife just picked up some roasted Hatch Chiles to put in some hatch green chile biscuits she is making for her biscuit business. It was the first time I tasted hatch chilies and all in all I hated them. They tasted like a hot green pepper and there are few flavors I find more repulsive than green pepper. But the biscuits turned out well and I think that people who like hatch chilies will enjoy them.

                  Just got an e-mail from Hatch Chili Store, they have a limited run of Hatch chili bacon. Expensive! 2 lbs for $65.00 plus shipping. Pass...

                  My local HEB had some Hatch bacon but it is out of stock right now. 1 1/2 lb for $8.80. Big price difference.
