    Etole aka Mexican Street Corn

    Mexican Street Corn or etole on the Weber. I loved the recipe which really was simplicity. After grilling the corn for a bit, I basted a few ears with sour cream and the remaining ears with mayo. Sprinkle a little chili powder on and you are good to go. While warm throw on some cojita cheese, a squeeze of lime, and fresh cilantro.

            Love it. Hmmm...Should I admit this --- Okay, had a craving for it and made with caned corn once. It didn't suck.

            When I was dating my wife she introcuded me to elote. At first when she descibe it I wasn't sure. After eating corn on the cob with butter, salt and pepper my whole life. But once I tried it I was surprised how well the flavors work together.

              SheilaAnn I grew up in Yorkville and I remember the family going to the mall when it was first built. People were saying why the heck is the mall in the middle of corn fields? Only if we owned those corn fields.
