    Black Garlic

    Sure, we could google recipes and whatnot (and we will) -- but thought we'd ask the Pit first for their (usually) solid advice.

    Picked up some black garlic at the market the other day. Any ideas what to do with it?


    (Look, they used it on "Worst Cooks in America" this season, so it can't be too complicated an ingredient)

    Bet It All on Black Garlic Burger (from Bob’s Burgers TV show). Made them a while back on the blackstone and they were great. Makes me wish I had some black garlic now! This recipe is virtually same as the official one in the bobs burgers cookbook.

          It is fermented garlic. Tends to have a milder flavour than non-fermented garlic. It also offers some potential health benefits.

          I made some fermented garlic once and it stunk up the house, it is a good way to use up small cloves from garden. If I make it again I will let it ferment in the shed.

        I’ve seen it at the grocery but never tried it, be interested to see what u think of it, does it smell like garlic?

          I've seen black garlic oil added as a flavoring to ramen right before serving. And now I want some ramen....

            I like to cook it in butter and use that to baste steaks with.

              I used it in a recipe a couple years ago. Did not add anything special, nor could I really taste anything particular to "black garlic". Tossed the rest and have not used it since.

                Use it like you would roasted or smoked garlic. But remember it is really sweet... even more so than roasted.

                  Also black garlic mayo--good for tuna salad and egg salad. You basically mash up the black garlic and add it to Duke's or to Japanese Kewpie Mayo (as opposed to American Kewpie Mayo, which is not as good IMO). Here's how it's done: https://umamigirl.com/black-garlic-mayo/
