    More on the mushrooms and onions under the roast

    So this is what the setup looks like. Knowing my oven, this cook will take 3-4 hours. That might be too long for the veggies? Maybe I can add them the last hour, I dunno.

    I haven’t rubbed the roast yet, I got the Cow Crust lined up. That’s my go to for rib roasts now. That’s a dry aged prime, a beautiful piece of meat.

    Might add a few veggies at the beginning to build some depth of flavor in the stock - but the majority in the last 90 minutes or so.

      The mushrooms came out great, the onions didn’t get done enough. In the future I’ll just do mushrooms.
