Who has smoked octopus?

OK, so every Christmas Eve I make the Feast of the Seven Fishes. Since my grandsons love octopus, I thought I'd add that as an 8th, because the rest of the fam doesn't.
I reviewed this post, and the one " Smoking an Octopus - Challenge Reluctantly Accepted", but there is not a lot of detail from people who have done it.
After scouring the web, it appears that the recipes are all over the map, and that everybody's an expert (but you never know how it turned out, because there's no epilogue).
So, I'd love some comments on the following:
After cleaning, etc...
Dry or wet brine?
Boil/simmer it for about an hour with a little water.
Let cool.
Coat with EVOO, cold smoke it for about an hour.
Re-coat, crisp it on a very hot grill for a minute or two per side.
Bathe in olive oil with lemon juice and oregano.

A good rule of thumb is to smoke only fatty/oily seafood (i.e., salmon, mackerel) but not lean (e.g. octopus .... which is about as lean as seafood gets). Grilling gets my vote, too (especially when combined with some sort of sure-fire tenderizing technique like sous-vide before it goes on the grill).

Interested in hearing your results. I saw whole fresh octopus in the seafood deli at our local Winco supermarket today. I was wondering what I'd do with it, though I didn't buy today.
