I really like MeatChurch and Kosmos honey rubs and want to try making my own. Granulated honey was easy to find on Amazon, but curious if anyone has a go to recipe they would share. Otherwise I’m thinking I’d just follow the MMD recipe but sub in the honey rub for all or some of the sugar?

I think that is a reasonable place to start. I keep forgetting about granulated honey to be honest.
For me, I simply drizzle honey on my ribs along with some slices of butter when I wrap them. You might just try working with regular honey too.

I'd start with MMD, replace the sugar with granulated honey & granulated brown sugar, scale back or eliminate one or both of the paprika & garlic. Would add mustard powder and MSG, maybe some soy/tamari powder. Plenty of black pepper, some cayenne for heat might be nice too.
Not sure about the rosemary. Not a huge fan of it though I keep it in the MMD because, as he notes, it definitely adds something. Maybe sub thyme?

I make a sweet mustard rub that I pair with a honey mustard glaze. Replacing the light brown sugar with granulated honey would probably be nice. Below is where I posted it in the pit.
I’ve posted this recipe when I made ribs with this rub I came up with but I figured I’d post it here for all to see. Sweet Mustard BBQ Rub: 1/4 cup light brown sugar 1/4 cup coarse ground mustard seeds 2 Tbsp Kosher salt 2 Tbsp coarse ground black pepper 2 Tbsp granulated onion 1 Tbsp paprika 1 tsp ground rosemary 1 tsp
