    3 little piggies (pork bellies)

    Decided I needed to make some bacon. This is what 22 lbs of pork bellies look like right after they start the brining process.

    Anticipate some fresh deliciousness on Christmas!

      I see 6 packages as in 3 bellies cut in 1/2. Or maybe it is 2 bellies cut in 1/3. I have an 11 lb one in the cure.

        6 packages. 1/2 belly in each. Had an 8 pounder, 7.5 pounder, and 12 pounder. 12 pounder is thick and will need 7 days in the cure according to Dr. Blonder’s calculator.

          Phase 2. Two bellies going on today while the thicker belly has two more days to cure.

                Received a new Lem slicer for Christmas. Used that to slice up the bacon. Now ready for distribution to those that have been nice!
