Have any of you made buckboard bacon, pork shoulder made into bacon? I just came across this and had to wonder. I wouldn't want something like Canadian bacon, but something less fatty than regular bacon could be good, if it could crisp up. Especially in sandwiches.

I've made Canadian Bacon following the AR/Meathead Recipe using Dr Blonder's Calculator and it was very good. I would think you could do it. When I've bought it at a Meat Market it was called Cottage Bacon made from Shoulder. You could use Pork Shoulder or Pork Sirloin Roast would be slightly leaner. The Cottage Bacon we'vr bought did crisp up some when grilled.
