    Buckboard Bacon

    Have any of you made buckboard bacon, pork shoulder made into bacon? I just came across this and had to wonder. I wouldn't want something like Canadian bacon, but something less fatty than regular bacon could be good, if it could crisp up. Especially in sandwiches.

    I've made Canadian Bacon following the AR/Meathead Recipe using Dr Blonder's Calculator and it was very good. I would think you could do it. When I've bought it at a Meat Market it was called Cottage Bacon made from Shoulder. You could use Pork Shoulder or Pork Sirloin Roast would be slightly leaner. The Cottage Bacon we'vr bought did crisp up some when grilled.

    I've made it and liked it. The family did not. I used a boneless shoulder cured with my normal maple sugar cure - sliced to the same thickness as belly bacon. It crisped but not to the extent of belly bacon. Probably the reduced fat to lean ratio. Still good out of hand and in sandwiches.

      I use boneless pork loin and make it into ham.. it is great fried for breakfast and also the perfect size for ham sammies !!
