    Huli Huli pork butt

    Love Huli Huli chicken and make it all the time but wanted to try a Huli Huli pork butt. Looking for recommendations. Should I marinate the butt in Huli Huli sauce for 24 hrs or inject? Was thinking if injecting but since it's pretty acidic was wondering if it would make the meat mushy? If injecting how long before cooking? If I marinated for 24 hrs not sure how much would get inside except for the salt.

    If you want those flavors interspersed in the meat you would need to inject. When I injected butts I left them in the bag to inject. I don't bother injecting anymore.

    I would dry brine for at least 24 hours. Then maybe use the huli sauce as a glaze later in the cook with a simple rub to start out the smoke.
