Way too much food for four of us. Leftovers are never a problem. With time on my hands I'm going to make something with them I haven't tried before.
Thinking on a pork belly pie using shop bought puff pastry. Cutting up cubes adding some Bbq Sauce and covering with foil to steam in the oven for about half hour at low-ish heat (per burnt ends.) Once done add a bit of MMD and fill the pie.
Might be a bit rich?
Any suggestions for another way to prepare the filling?
Sounds like a riff on the pasties (meat pies) they make around here. I'd think about adding onion and garlic and would be tempted to add some diced potato and or carrot. A little veg might cut the richness and add flavor and texture.
