I had about 2 pounds of left over pulled pork from a butt I smoked Monday. Did that come out right? Anyway,
I knew what I want to do with it, tamales! These are traditional red pork tamales just out of the steamer. I wanted a shot of one of them open, but about the time I took this shot I heard "are they ready" over my shoulder. Things went downhill from there. For us there is no better way to use up pulled pork.

Tamales are one of those foods I love eating but they are hard to find locally. Guess I need to suck it up and make some for myself. Yours look awesome and are inspiring me to grab some of the pulled pork I have in the freezer.

Tamales at Christmas is a true Texas tradition. I love the heck out of those things !! Nice job Oak Smoke .
Gotta tell a tamale story. My first esposa was Tex-Mex and for sure the women in the family came over for a tamale cook off our first Christmas in our new house. Well the night before we went out and imbibed a little too much. I woke up about 3 am with trench mouth and went to the kitchen to get some water. I open the refrigerator, half asleep and staring at me square in the eyes was this giant pig head. I reeled back and fell over a kitchen chair and ended up on the floor. Everyone woke up, came to my rescue and laughter and ridicule soon followed. Later learned the best pork meat is from the jowls and other parts of the pig's head when making tamales.
Did I mention I love tamales at Christmas?
