    Bacon cure leak

    I have followed Meathead's recipe for maple bacon and it is on day 6 of the cure. I have 4 bags with 1 lb slabs in each...after the first day of curing I noticed that one of the ziploc bags had a leak so I moved the meat and cure to a new bag. It looks like I didn't lose much liquid from the leak but should I be concerned with any loss? I know Meathead was very specific with the cure recipe so should I mix up another batch of cure to add to the bag?

    This shouldn't be a problem. If you didn't add any additional water to replace the lost fluid, your should still be close to your original concentration of cure. As long as you have enough liquid to cover all your slabs, you should be fine.
