Though typically, I don't tend to flip smoked items, these appeared like they was a gittin more colour on one side, than t'other, so at ~1 hour, as depicted above, I flipped em all...
Despite th fact that this was all strictly experimental, I found myself not bein totally displeased with my dang ol self, at th appearance, an certainly th aromas, at that point in time
As if to verify my assessment, I had multiple neighbours stop by, as well as th entire menagerie of dogs an cats from th hood...all good signs
Now, early on, as I was all a cuttin em apart, an givin em some rub, I was readily able to identify a couple of comparatively anemic lookin end 'ribs', which swiftly became designated a cook's treat, shown forefront, above...
Gotta eat, keep my strength up, cause who knows how long these gonna take, to git done? Certainly not me, that's who...

Still seriously considerin makin a broth/stock, by boilin them leather gloves, afore I put em out to pasture, though...
Yeah - I've got a pair of welding gloves that have never seen any duty but kitchen, grilling, or smoking. After more than 10 years of steady use, they smell better than some of the stuff I serve to friends and family.
