Our daughters in laws are heading out to the PNW to visit our her and her family. Since we are located along the route we have invited them to come by and spend a night while on their way. I planned to do baby backs for dinner that day but since we won't know exactly what time in the afternoon they will arrive, and won't until a couple hours before they arrive have been thinking of getting the ribs done a little early, then cambro them up until company has arrived and it's time to sit down for dinner. Now I'm wondering if that is a good thing to do. It's clear with some cuts of meat it helps but I'm not sure about pork ribs. So is it ok to do this and expect good results? TIA
