    First whole hog

Cooked my first whole hog yesterday. Turned out a bit darker than I wanted but tasted great and tenderness was spot on! Was definitely a crowd pleaser. Was a great experience and can't wait to cook another one.

Is that a temporary pit or did you do masonry work to keep it up? I can’t really tell for th pic, if it’s temporary I’m copying this! Outstanding regardless.

          Dry set

Great setup. Simple but effective. They look dry set, or did you mortar them in?

The pit is dry set. I do plan on making it permanent. I found the plans on the internet. Here is the URL

          https://www.instructables.com/id/Cin...Offset-Smoker/

I am going to make a few changes now that I have cooked on it a couple of times. I will say being just dry set it managed temp very well. I recommend using this calculator for determining sizes of the vents.

                      That is super cool!!!!!!

We've cooked a couple of hogs. Fun! You'll have to set up a burn barrel and just put in coals to keep that hog a lighter color.
