I'd like to know how and why you cured the pork loin. I have a bone-in full packer dry aged 2 weeks that I'm frenching & smoking with KBB & Hickory Chunks in a few hours.

JGo37, where did you get 25# of meat for $50 w/ free shipping? @Backroadmeats..I'm interested in getting into curing meats. I've done MH's Pastrami and dry cured bacon with success. Can I PM you for advice?

klflowers it isn't that bad .. almost all my snow piles in the yard have melted and the dusting we go last night melted in the daytime high of 40 degrees..ahh who am I kidding this winter sucks but it is supposed to be almost 70 degree on Saturday!!😎😎
