    Pork loin

    I did a last minute purchase of a marinated pork loin. I want to throw it on the kamado. Is it best to cook at 225 with a quick seat at the end?

    In my opinion pork loin is too lean for low temps. I would cook at 300 to an internal temp of 36-38.

    Agree. Zero fat, doesn’t need low and slow, nothing to render. And don’t exceed 140*. Suggest rolling it around something, or bacon wrap for some added dimension.

      I ended up having to use my oven. I cooked it at 400 in a hot cast iron pan. Internal temp got to 137 and I took it out. Took about 18 min with one turn. Came out perfect. Not a dry bite. Thanks for help.
