Fall off the bone dries out faster, I guess. I like em either way. I just try to use " the bend test" and hope for a good turn out

Mostly I like a little tug to my ribs and seeing the bit marks which lets me see the rib itself. The bark, smoke ring, meat ect....
But sometimes I just enjoy putting the whole dang rib in my mouth and and pulling the bone out, kinda like pulling the bone out of a shoulder, in one clean piece.

If you are looking for FOTB ribs I'd recommend spares over baby backs. They have more fat and can withstand a longer cook.
