All the cartoons about lonely cold weather pits gave me the itch! Ribs turned out really well flavor/tenderness wise but the bark wasn’t quite there. 3.5 hours today unwrapped at 250-275.
Been playing around with a water water pan directly on top of my tuning plate but below my grate nearest the firebox. It speeds cooking times up due to less evaporative cooling but prevents my bark from setting well. Probably going to start leaving it empty for the first two hours and spritzing only to get a good bark set. Thoughts?

My advice is to loose the water pan all together. I never use them and bark is always set up real nice. Or if you want to use the water pan move the ribs to the opposite side on the cooking chamber. Since you are already spritzing, you really don't need the added moisture to the cooking chamber.
