Picked up some nice pork loin bone in chops from the butcher and decided to go whole hog on them. Opened up some cavities, stuffed them with a pork mix then bacon wrapped for the trifecta !!

Started by combining some home made brat crumbled with some feta cheese, some Italian seasoning, salt and pepper and a splash of Worcestershire ....

After combining I pre-cooked my bacon to help it to better crisp up on the grill....

Then gently opened up a pocket in the meaty end of the chop and stuffed as much as I could get in there. Then wrapped and pinned each with several strips of bacon. Left a couple plain, the wife doesn't like her's too fancy. Gave everything a good seasoning and stuck them back into the fudge while firing up the kettle ....

Then onto the grill they went followed by some yellow and Mexican squash .....


No matter how you cut it, pork fat rules !! Meal came out great, chops were amazing !!
