Trimmed and tied myself, picture makes that clear. Intended to fill the middle with stuffing as per recipe from the free site.... didn’t work out that way. Pretty good but too salty, as I noticed too late the rack was injected w/ 10% solution. Smoked on Rec Tec at 325. The meat I got from Costco, super tender. Glaze was delicious. Family was happy.
