    GOOR Ribs II

    Last Sunday, 30SEP18, I smoked up another 2 racks of BBRs on Phylicia...

    They was some differences in rubs, temps, smoke chamber location, an final results, so I thought I might as well share all that, right here...

    First things first, I needed to quick like a bunny clean out th ash pan/fire grate area...as I noted before, it certainly seems like she utilizes th fuel efficiently/completely, as there is really never much but fine ash remainin, to be contended with... few smallish clinkers, mebbe, here n there...

        <EDIT>: Fergot to mention I added a thinnish~ 16" split of hickory to my coals

        Rickie was over here, by that time, comin in fer th assist, an grabbed my beloved cowboy hat offa th firebox lid, lest I should immolate it...Not Bloody Likely, but I fully appreciate him flyin wingman!!!!

        Then, as per SOP, I got another chimley of lit goin, on a Smokey Joe...couple of them Weber firestarter cube thingies, an a double page of newsprint, to light it off...

        As mentioned, previous, there were some differences in approach/technique this cook...
        Fer one, I only had all th vents set (initially) at 4 turns open, instead of th 6 I have been doin...
        I was experimentin with a bit lower temp range, shootin fer more like 225°-250° at th cookin grate, vs th previous 275°-300...

          While my chimley of KBB was heatin up, I went in, an seasoned two slabs BBRs, first SnP, then some rub...

          One rack got Harry Soo's Love Meat Tender, All Purpose Championship Rub, t'other one got some Famous Dave's Rib Rub...

            Some other differences I made, this cook, were I used th bottom rack in th smoker chamber, vs th top rack previously utilized...
            When I checked em, at 0139, they was lookin purty dang good, but they wasn't quite done yet...

                Actually, between th two rubs, it was bout a dead tie...I'm likin em both, got not one negative word to say bout either one...

                Both, as I eat em, are delightful, with some very nice complexities/nuances revealin themselves, bite, after bite....

                I couldn't pick between th two, this time...

                Mr. Bones Can you describe the Dave's rub for me? I've never been to Famous Dave's and I'm interested to hear how the rub is. Shoot maybe I should just buy a bottle, if I don't like I can always re-sell or give away.
