hi peeps I'm trying out the bacon recipe in the main site an just want to be sure i havnt gone wrong .
my slab of pork belly was around 2 pounds so I used 2/3 rds ingredients an used the calculator for Prague powder but am I right in using 2/3rd the stated cups of water?
Yes on the 2/3 cup of water . Personally I would go buy more pork belly and make a double batch. It's so good it won't last long. here's a pic from bacon I made Monday.
I believe the total liquid for 3 lbs is 1 1/4 cup. I had 2.8 lbs of belly so I calculated (1.25*2.8)/3x solving fo x gave me 1.17. One of our bacon gurus confirmed that was correct and then you plug into the calculator for the Prague powder and bribe period.
