No way in H#LL. But did my first cook on the highland with a slab of SLC ribs. Bought a load of mixed woods this morning from my neighbor and smoked them with cherry, used my usual rub and got temp settled in at 237. I have only done one mod to this so I could have even temps across the length. Using the cyberq and a dot to monitor my temps everything stayed within 5 degrees. I still will use the 321 method as it is what I like. Maintaining the fire is easier than I thought it would be, but learning how to on the Joe was a big help. All in all I am quite pleased with the turn out do believe they have a little better color as well as flavor. Finished with some Blue hoggs red, as you can see nice clean pull from the bone Definitely will be a work in progress but last I have my foot in the door and not thinking,dreaming about switching over. Beans came out good as well on the little top plate

If you can afford the land to have a significant amount of trees, you don’t care what wood costs. If you care what wood costs, you can’t afford to have trees.
Compounding the problem is that a lot of developments are HOAs, and all HOAs have a woody for Royal Palm trees. I’m not supposed to plant anything that isn’t a softwood Palm.
It creates a problem.

For smoking, I am a committed stick burner.
For grilling, it's all about charcoal. Almost always HEB brand mesquite charcoal. If not that, then Kingsford mesquite charcoal.
What is this "cherry wood" of which you you speak? There is only Mesquite! Everything else, with the possible exception of oak, is just kindling.

Hickory is my go to,it was my impression that Mesquite is better for grilling.(not trying to start anything here)

No worries, Bards. I've never heard that about mesquite for grilling.
In most of Texas, smoking wood is almost always mesquite, oak or pecan. I not a fan of pecan, mesquite is my go to, but not always easy to find. Oak is my second choice if I can't get mesquite. Mesquite burns hotter than oak, so I use less of it. The flavor imparted by mesquite is just out of this world.

Mesquite makes good pellets for higher temp cooking, because it burns so hot.
