    Pulled Pork Yield

    I just smoked and pulled two butts with a Gross Weight of 15.5 pounds.
    After pulling my yield is just over 7 pounds. The bones and fat drippings were about 2.5 pounds. Where did the other 6 pounds go? Moisture?
    Curious minds want to know.

    after a few smokes, my pale is pretty full!

        My yield is usually around 50%, excluding fat drippings collected and the bone. The rest of the loss would be water evaporation.

          Since you evidently saved and weighed the fat/drippings, yeah, a lot of moisture. The stall is moisture "sweating" to the surface and cooling the meat. I did 2 butts about the same size as you did just yesterday. Look at the difference between the first picture, and the second. That's after 10 hours in the smoker. The third picture is after another hour in the faux cambro.
          Yet they were still very juicy.

            Yep that's normal. I wish they and briskets stayed their raw weights when cooked.

              I defer to the gentlemen above for the reasons. 50% yield is consistent with my experience. With some variation, of course!

                I never get fifty, I typically get fitty percent.
