    First batch of bacon is in the smoker

    9 lb poek belly from costco. Cut into three chucks and marinated according to meatheads article. Just doing the standard this time, no maple or jalepeno or anything yet.

    It spent 4 days in the fridge turning and squishing etc. currently smoking it with maple wood.

      Thats what i hear and i have very little doubt about it. Crappy thing is i already have 2 of these 3 slabs promised to someone else, lol.

      • Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

        Mmmmm. Smells so smokey as its cooking. This was my first cook with maple wood and i have to say so far i like it a lot.

          I cut it into 1 lb portions and give some to friends. They love it. The hardest part is going to Costco!

            I am heading to Costco soon to pick up 5 bellies to get curing. Will smoke them next Friday. And since I started smoking bacon a year and a half ago I think I have only bought bacon from the store once. Homemade is delicious and much cheaper.
