Bone side down for me. I've tried the rib rack thing and after several different iterations, I don't find them to work very well at all. I'm doing 5 or 6 racks on Wednesday maybe I'll try one or two meat-side down?
No, on second thought, I think I'm going to have enough variables this time. I'm going to do some with MMD and some with Cool Smoke Rub, to compare. So I think I'll wait on changing anything else.
