I was in my very large favorite grocery store yesteday (not a chain store) and they must have been preparing for some kind of tasting event. They had these pork riblets that they were grilling. They were about 1 inch wide and in strips the length of a rib. They seasoned them with salt and pepper and garlic and no sauce. So I asked them about their procedure. They said that after grilling them that they would then steam them for about 2 hours. Their recommendation was about 1 hour if doing them at home. I am not sure if they sauced them comming out of the steamer or put them back on the grill to do that. I found a recipe on the internet that did a similiar preparation and it claimed to be an Applebee's process. Have any of you tried to cook riblets this way and what are your comments/recommendations?
