    smoked pork loin. reheating and safety

    So I smoke cooked a pork loin and froze a third of it in a vacuum sealed bag. Once i let it thaw in the refrigerator i planed to heat it in boiling water to 140 degrees. Instead of reheating it however, is it safe to slice it and eat it cold or slightly warmed, such as a ham? i understand a ham is also cured, but can my smoked loin be considered "fully cooked" and / or "read to eat"

    Well the ham is cured but if the machines that sliced the ham are contaminated with Listeria then you have a big big problem. It's called post-lethality contact.

    I've eaten leftover pizza that stayed on top of my stove overnight.

    You should be good given the slicing mechanism is clean.

      Cooked then frozen, and thawed for consumption is quite safe. I would make sure it was used up and not refrigerated or frozen a second time.
